Quiche Beyond Belief

5 strips thick-cut bacon
8 oz. boneless, skinless chicken breast
1/2 c. chopped onion
1/2 c. finely chopped red pepper
8 eggs
1/2 c. heavy cream
1 1/2 c. shredded cheddar cheese
1 tsp. baking powder
1 tsp. salt
1 tsp. black pepper

One ripe avocado

Generously butter a 9x9 baking dish.
Cook the bacon and chop into small pieces.
Cook the chicken breasts in the bacon grease, then chop into small pieces.
Mix the eggs, cream, salt, pepper, and baking soda in the blender until fluffy.

Cover the bottom of the baking dish with the cheese, layer the bacon, onion, red pepper, and chicken on top of the cheese.
Pour the egg mixture over the top.
Bake at 350 degrees for about 30 minutes.

Top each serving with bite-sized chunks of avocado.

Makes 9 servings
